Breakdown of each template style:
Tickets:
Tickets is generally used when you don't need to worry about availability and just want to sell tickets.
Open dated will just give the option to sell as many tickets as you set available under each bookable resource. In most cases this can be set to 9999 and will just give unlimited availability.
Setting to 10 on the bookable resource will limit how many tickets are available PER BOOKING, but this will not stop people from just making another booking.
Date specified:
Setting to date specified means the tickets are then only valid for one day, but using the ticket template style will not limit availability (aside the number per booking):
Availability / Groups:
Availability / Groups does take into account availability PER TIME SLOT. Generally this will be per day, but it is possible to have more than one time slot per day.
Sold 6, refreshing the page:
Once availability for the day is gone, the day will go red and no longer be bookable.
Birthday Parties:
Requires specialized set up.
Session / Tours:
This type of template is determined by the number of tickets allowed per session:
