Q) - Why can I not recreate the till data for my back office pseudo till ?

A) - Pseudo tills are virtual tills. You cannot recreate till data for virtual till. The settings circled below that you have defined for this till is how you would configure a pseudo till. If you want to setup the till as an actual real physical till, “Type of Till” needs to be set to Merac EPOS Till and there is no need to define a Default (PLU) as a real till does not even use this setting. Then you will be able to recreate till data for the till in back office.
